Apesar dos poucos participantes, o estudo seguiu o modelo epidemiol\u00f3gico mais robusto conhecido para identificar rela\u00e7\u00f5es de causa e efeito: o ensaio cl\u00ednico controlado e randomizado com cruzamento. <\/span><\/p>\n<p><span style=\"color: #000000;\">Nesse modelo, separam-se aleatoriamente os participantes em dois grupos que sofrer\u00e3o interven\u00e7\u00f5es (como tratamentos ou dietas) diferentes, por exemplo, A e B. Na metade do experimento, as interven\u00e7\u00f5es s\u00e3o trocadas e, ao final, os resultados do tratamento A s\u00e3o comparados com os do B.<\/span><\/p>\n<p><span style=\"color: #000000;\">Usando essa estrat\u00e9gia, a equipe de Kevin Hall, pesquisador dos Institutos Nacionais de Sa\u00fade (NIH) dos Estados Unidos, mostrou, pela primeira vez, que uma dieta predominantemente baseada em produtos ultraprocessados leva a um ganho de peso importante em pouco tempo: cerca de 1 quilograma (kg) em duas semanas. <\/span><\/p>\n<p><span style=\"color: #000000;\">Publicado em 16 de maio na revista\u00a0<a href=\"https:\/\/www.cell.com\/cell-metabolism\/home\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Cell Metabolism<\/em><\/a>, o trabalho parece ser o teste mais rigoroso a que foi submetida a classifica\u00e7\u00e3o de alimentos proposta h\u00e1 pouco mais de 15 anos, e formalizada em 2009, pelo epidemiologista brasileiro Carlos Augusto Monteiro, da Faculdade de Sa\u00fade P\u00fablica da Universidade de S\u00e3o Paulo (FSP-USP). <\/span><\/p>\n<p><span style=\"color: #000000;\">Chamada de Nova, essa classifica\u00e7\u00e3o agrupa os alimentos em quatro categorias de acordo com o grau de processamento:\u00a0<em>in natura<\/em>\u00a0ou minimamente processados; processados; ultraprocessados; e ingredientes culin\u00e1rios processados.
